The BEST Honey Vanilla Granola



As a little girl, I enjoyed eating cereal for breakfast during school days. Now, don't be mistaken, my mom did cook breakfast for us. Of course, as a child, I was drawn to the sugar and flavors of the cereal. The crunchy berries, cinnamon pieces, peanut butter balls, and fruity jacks (to name a few). Fast forward to feeding littles, this way of eating changed. I became more cautious about our sugar intake, along with other things, that are present in store-bought cereal. Sounds a bit much right? 

Over the years I've made many flavor combinations of granola, some of which, we enjoyed more than others. Which leads to this recipe...



Flavor Variations

Peanut Butter- remove half of the honey and add 1/2 cup Peanut Butter to the base recipe

Almond & Cranberries- add 1 cup Sliced Almonds and 1 cup Dried Cranberries

Chocolate Chip- add 1 cup of Chocolate Chips (semi-sweet or dark) once the granola cooled a bit

Mixed Nuts- add desired nuts about 1/4 cup per nut

Spiced Almond- add 2 tsp Cinnamon and 1 cup Sliced Almonds

Peanut Butter Chocolate Chip- remove half of the honey and add 1/2 cup Peanut Butter and 1/2 cup Chocolate Chips (dark)

    Honey Vanilla Granola Recipe

    Ingredients
    1/2 cup Coconut Oil (melted) or oil of choice
    2 tsp Vanilla Extract
    1 cup Honey or maple syrup
    4 cups Old Fashioned Oats
    1 tsp Salt

    Instructions
    1. Preheat oven to 300 degrees and line a baking sheet with parchment paper.
    2. In a large bowl, mix coconut oil, vanilla extract, salt, and honey until well combined.
    3. Add oats and mix until all oats are coated.
    4. Spread granola evenly on the baking sheet and place in the oven. Bake for 20-25 minutes or until toasted to your liken. Be sure to flip to prevent burning. Keep in mind- the granola will harden as it cools.
    5. Remove from oven and cool completely before storing. Store in an air-tight container for up to 1-2 weeks or in a freezer bag in the freezer up to 3 months.

    Ways to enjoy Granola
    1. With yogurt- layer granola with yogurt and fresh/frozen fruit for a parfait
    2. On Oatmeal- sprinkle granola on top of oatmeal for added crunch
    3. Smoothies- add granola in smoothies for texture or as a topping
    4. As a snack- enjoy granola by the handful for a snack on the go
    5. Trail Mix- mix granola with added nuts, seeds, dried fruit, and candies
    6. Salad topping- for a crunch and added sweetness
